According to an article in "Tompkins Weekly," (Vol. 3, No. 21-March 9-15, 2009) a Cornell Researcher (Rui Hai Liu) believes she has found that particularly the skins on apples reduce the risk for cancer in humans.  According to the article, when Phytochemicals (found in apple skins) were fed to lab rats, their cancer rate was reduced, their existing tumor growth slowed, and spontaneous cell death in tumors occurred.  The article also states that, "more than 60 percent of modern medicines are derived from plants."
